Georgian scrambled eggs with green beans

Ingredients for 2 servings:

  • 1 small onion(s), finely diced
  • 20 g butter
  • 4 pinches of salt
  • 2 pinches of pepper
  • 1 can princess beans, approx. 220 g drained weight
  • 1 tbsp, heaped savory, freshly chopped
  • 4 eggs
  • 1 tbsp, heaped chives

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

vegetarian

Melt the butter in a pan. Add the onion with salt and fry until light brown. Add the drained beans, cut into 3 cm pieces, along with the pepper and savory. Heat for about 5 minutes. Add the beaten egg and gently scrape it back and forth in the pan several times with a wooden spatula. Do not turn the egg over. It should set slightly and still be shiny on top. Serve and sprinkle with chives. We like to serve it with fried potatoes. It also tastes delicious with rice, flatbread, or mashed potatoes.
