Ingredients for 4 servings:
- 3 eggs
- 50 g brown sugar
- 100 ml buttermilk
- 100 ml water
- 75 ml coffee, strong, cooled
- 275 g flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp ground ginger
- ½ tsp clove(s), ground
- ½ tsp ground nutmeg
- 1 tsp cinnamon (heaped)
- 4 tbsp oil

Gingerbread pancakes, recipe from the USA
Whisk eggs, sugar, buttermilk, and coffee in a bowl. In another bowl, combine the flour, baking powder, baking soda, and spices. Then add them to the wet ingredients and mix well. Finally, stir in the oil. Add a little more buttermilk if necessary; the batter should be rather thick. Cook in a lightly greased pan over medium heat until round pancakes are cooked, turning them over when the surface is covered with bubbles.
