Ingredients for 2 servings:
- 2 eggs
- 3 slices of bacon (thick slices)
- 2 slices of cheese (toast cheese, e.g. Chester, Emmental)
- 2 rolls (Toasties from Golden Toast, not whole wheat)
- Salt
- Paprika powder, sweet
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Fry the bacon in a non-stick pan until crispy. Then remove and drain on kitchen paper. Reduce the heat slightly. Crack the eggs into the pan (keeping space between them!), then pierce the yolks to mix them slightly with the egg whites. After a short while, shape the eggs so they fit easily between the buns. Season lightly with salt and paprika. After about 2-3 minutes, place 1 1/2 strips of bacon on each egg. Place a slice of cheese on top and let it melt. After about 5-8 minutes, the eggs are ready (depending on your taste). While the eggs are frying, toast the buns and then carefully separate them. Place the eggs between the buns and serve. Note: Like a muffin from a large fast-food chain—but homemade and therefore much tastier. In the US, I learned this recipe not with bacon, but with large, fried slices of salami. That tastes good too, but the original recipe calls for bacon. If you like, you can fry a fried egg instead of scrambled eggs – but then the muffin will be much harder to eat.
