Ingredients for 1 servings:

  • 1 cup whole wheat flour
  • ½ cup white sugar
  • ¼ cup sugar, brown
  • ½ tsp baking powder
  • 1 tsp cinnamon powder
  • ¼ tsp salt
  • 2 eggs
  • ¾ cup oil
  • 1 tsp vanilla flavor
  • 1 large apple, peeled, diced
  • ½ cup raisins
  • 1 cup carrot(s), grated
  • ½ cup walnuts, coarsely chopped
  • ½ cup pineapple chunks
  • ¼ cup desiccated coconut

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

American good morning muffins. Makes 14 pieces

Preheat the oven to 170°C (fan assisted oven). In a bowl, combine the flour, white and brown sugar, baking powder, cinnamon, and salt. In another bowl, whisk the eggs, oil, and vanilla extract until light and fluffy, then add to the flour mixture and stir in. Add the apples, raisins, carrots, walnuts, pineapple, and desiccated coconut and stir in. Pour the batter into the muffin tin, filling each hole about two-thirds full. Sprinkle with a few desiccated coconut flakes and bake for about 20-25 minutes. Tip: Using honey instead of sugar makes the muffins even healthier.
