Chicken and vegetables from the wok

Ingredients for 2 servings:

  • 1 bell pepper(s), red, roughly diced
  • 4 carrots, sliced
  • 1 bunch of spring onions, sliced
  • 2 chicken breast fillets
  • 200 g soy sprouts, fresh
  • Spice mix (Chinese spice)
  • Soy sauce, dark
  • Oil (peanut oil)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the chicken breast fillet into strips and fry in a little peanut oil over high heat until crispy. Next, add the carrots and cook with the meat for about 2-3 minutes over medium heat. Then, add the bell peppers and cook for another 2-3 minutes. Finally, add the spring onions and sprouts and cook for another 2-3 minutes, stirring occasionally. Season the dish with plenty of Chinese spice and deglaze with soy sauce. Serve with rice or a rice/wild rice mix. For those who like it extra spicy, a bit of sambal at the table is always good.
