Quickly prepared tarte flambée

Ingredients for 4 servings:

  • 500 g dough (yeast dough)
  • 2 cups sour cream
  • 350 g bacon, finely chopped and diced
  • 5 large onions
  • 250 g cheese, crackling
  • pepper
  • Salt
  • Nutmeg, freshly milled or ground

Alsatian tarte flambée

Finely chop the onions and set aside with the remaining ingredients. Preheat the oven to maximum temperature – ideally 300 degrees Celsius. Make a firm yeast dough in the oven using flour (I prefer spelt flour or a slightly darker flour up to 1050 degrees Celsius), yeast, salt, and a little water. Do not let the dough rise! Instead, take a piece immediately, roll it out very thinly, and place it on a baking tray lined with baking paper. Spread with sour cream to cover the dough, top with bacon and onions, and sprinkle with grated cheese. Season the whole thing with freshly ground nutmeg (or ground nutmeg if you prefer), pepper, and salt. Place in the preheated oven and bake until crispy. If rolled out very thinly, the dough will be enough for 6-7 baking trays. The amount of bacon and onions depends somewhat on the thickness of the topping.
