Tomato – melon – salad with goat cheese

Ingredients for 4 servings:

  • 1 melon(s) (orange cantaloupe melon)
  • 4 large tomatoes, aromatic
  • 200 g cheese (goat cheese roll)
  • 2 tbsp Balsamic vinegar, lighter
  • 4 tbsp olive oil
  • Salt
  • Pepper, white, freshly ground

Deseed and peel the melon, and cut into medium-sized cubes. Remove the stems from the washed tomatoes and cut them into equally large cubes. Cut the goat cheese into thick slices and dice them as well. Place the melon, tomatoes, and goat cheese cubes in a bowl and mix. Then drizzle with the balsamic vinegar and olive oil. Season with salt and pepper to taste. Finally, gently mix everything together. Tip: If you don’t like goat cheese, you can substitute it with mozzarella—but you’ll lose some of the flavor.
