Ingredients for 1 servings:
- 180 g butter biscuits (wholemeal), finely crumbled
- 2 tbsp sugar
- 100 g butter, liquid
- e.g. cinnamon
- 1 can condensed milk, sweetened
- 4 egg yolks
- 10 tbsp lime juice
- 4 egg whites
- 3 tbsp sugar
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes
Mix the crumbled biscuits with sugar, butter, and cinnamon and line a greased springform pan, pressing firmly (without a rim). For a larger pan, or if you want a rim, simply use 1.5 times the amount. Mix the condensed milk with the egg yolk and lime juice, pour onto the base, and bake for 20 minutes in a preheated oven at 190°C. Then beat the egg whites with 3 tablespoons of sugar and a pinch of salt until stiff, spread onto the hot cake, and immediately return to the oven for about 5-10 minutes, until the surface is lightly browned. You can also turn on the broiler for a few minutes, but then leave it there to prevent burning. I definitely recommend not using more sugar than indicated, as the condensed milk is already very sweet. Refrigerate overnight, if possible.
