Ingredients for 4 servings:

  • 150 g kale, fresh
  • 2 tbsp oil (rapeseed oil or safflower oil)
  • 2 tbsp walnuts, chopped
  • 4 gherkins, hot
  • 2 tbsp yogurt (10% fat)
  • 1 tsp mustard (Dijon)
  • 1 tbsp vinegar
  • 1 tbsp sugar
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely chop or mince the kale, toss with about 1.5 teaspoons of salt and oil, and let it sit for 30 minutes. Finely dice the gherkins. Roughly chop the nuts. Add both to the kale along with the remaining ingredients and season to taste. For a spicier twist, add more mustard and pepper. This makes a hearty salad or, garnished with half a boiled quail egg, a savory appetizer.
