Ingredients for 4 servings:
- 1 kg potatoes, waxy, organic
- 4 tbsp oil
- 2 garlic cloves, pressed
- 1 ½ tsp salt
- 1 ½ tsp pepper
- 1 ½ tsp paprika powder, sweet or cayenne pepper

as a main course or side dish
Preheat the oven to 200°C (top/bottom heat) or 180°C (fan oven). Wash and brush the potatoes thoroughly, dry them, and quarter them. In a large bowl, combine the oil, garlic, salt, pepper, and paprika or cayenne pepper. Add the potato wedges to the bowl and toss well with the oil and spice mixture, ensuring they are all coated. Place on a baking sheet lined with parchment paper and bake for 40-50 minutes, turning the potatoes occasionally. A sour cream dip goes well with these country potatoes as a main course. They also taste great as a side dish with grilled or roasted meat.
