Satay skewers

Ingredients for 4 servings:

  • 500 g pork or chicken breast
  • 1 stalk lemongrass, fresh
  • 1 tsp coriander
  • 1 tsp cumin, ground
  • ½ tsp salt
  • ½ tsp pepper, ground black
  • 2 tbsp sugar
  • 1 tbsp curry
  • 400 ml coconut milk

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Muh Sate

Cut the meat into strips about 10 cm long and 3 cm wide. Soak the wooden skewers in water so they don’t burn as easily later on the grill. Wash the lemongrass and cut into thin slices. Crush both in a mortar with the coriander and cumin seeds. Mix in the salt, pepper, 2 tablespoons of sugar, the curry powder, and 3 tablespoons of the thick layer of coconut milk on top. Season the meat with this mixture. Cover the meat and marinate for at least 1 hour. Then thread the meat lengthwise onto 12 soaked wooden skewers in an accordion pattern. Cook the skewers on a charcoal grill for about 3 minutes per side or in an oven at 200°C top heat for about 15 minutes, until browned, turning frequently. Serve with lukewarm peanut sauce.
