Ribs as crispy (almost?) as at an Asian restaurant

Ingredients for 4 servings:

  • 1 kg ribs (pork ribs), flat
  • 1 tbsp soy sauce, preferably Chinese
  • 1 tbsp sweet soy sauce, Ketjap Manis
  • 2 tbsp potato flour
  • 2 cloves garlic
  • 1 piece(s) ginger, sliced
  • Oil, sunflower oil for the pan

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Separate the individual ribs, mix both soy sauces, and brush them onto both sides. Marinate until the next day. Heat oil in a grill pan (if available, otherwise in a heavy pan). Fry the garlic clove and ginger slices, crushed with the palm of your hand, until browned, then remove. Dust the marinated ribs liberally with potato flour and fry in hot oil until crispy on both sides. Serve with stir-fried vegetables and rice.
