Ingredients for 1 servings:

  • 255 g flour, sifted
  • 65 g powdered sugar
  • 225 g butter, cool, not cold, in pieces
  • 1 ¼ tsp salt
  • 4 large eggs, beaten
  • 200 g white sugar
  • 125 ml fresh lemon juice
  • 30 g flour
  • ½ tsp baking powder
  • 1 lemon(s), untreated, zest
  • Powdered sugar, for dusting

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

American lemon slices

Preheat oven to 175 degrees C, bottom heat if possible, otherwise top/bottom heat. Line a 22 x 30 cm baking pan with aluminum foil, pulling the foil up around the edges. Dough: In a bowl, roughly mix the butter pieces with the flour and sugar. The ingredients should just be combined. Press the dough mixture into the bottom of the baking pan. Bake for 20-25 minutes; the base should be lightly browned. Remove the pan from the oven and let the cake cool in the pan for 20 minutes. Topping: Mix the eggs, sugar, and lemon juice in a bowl. In another bowl, combine the flour and baking powder. Add the flour mixture to the lemon mixture and mix. Spread the lemon mixture over the cooled cake base and bake for another 25 minutes. Let the lemon bars cool in the pan, then dust with powdered sugar. Remove from the pan along with the aluminum foil, cut into 8-12 rectangles, and serve.
