Ingredients for 4 servings:
- 60 ml chicken broth
- 5 tsp butter, melted
- 1 clove(s) garlic, very finely chopped
- 125 g breadcrumbs, or a little more
- 1 tbsp Parmesan, freshly grated
- 1 tsp sweet paprika powder
- 4 chicken breasts
- ¼ tsp salt
- ¼ tsp oregano, dried
- ¼ tsp black pepper
- 4 slice(s) ham (prosciutto), thin slices
- 4 slice(s) Mozzarella , depending on the size of the slices
- little oil
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes
Chicken Cordon Bleu
Preheat the oven to 180°C (top/bottom heat). Heat the chicken broth in a saucepan. Add the butter and garlic. In a shallow bowl, mix the breadcrumbs, Parmesan cheese, and paprika and set aside. Now flatten each chicken breast between cling film (coated with a little oil) to a thickness of approximately 0.5 cm. Sprinkle both sides of the chicken breasts with salt, oregano, and pepper. Place 1 slice of prosciutto and 1-2 slices of mozzarella on each breast, then roll up like a Swiss roll. Then dip each roll in the chicken broth and dip it in the breadcrumb mixture. Place the rolls seam-down in an ovenproof dish, pour the remaining chicken broth over them, and roast for 25-30 minutes until golden brown. Then remove from the dish and serve on plates. Serve with mashed potatoes and peas or green beans.
