Chicken breast with apple cider sauce

Ingredients for 4 servings:

  • 4 chicken breasts
  • ½ tsp butter
  • ¾ tsp salt
  • ¼ tsp black pepper
  • 250 ml apple wine (cider)
  • 250 ml chicken broth
  • 1 tsp Dijon mustard
  • 2 tsp parsley, flat
  • 1 tsp lemon juice
  • some cornstarch, if necessary

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Melt the butter in a large frying pan over medium heat. Sprinkle the chicken breasts with salt and pepper, add them to the pan and sear for 4 minutes on each side. Then keep warm. Now add the cider, chicken stock, lemon juice and mustard to the pan, loosen the pan drippings and simmer for 2-3 minutes until the sauce thickens slightly. Add the chicken breasts back to the pan, turn them over once so they are coated with the sauce and simmer for about 5-6 minutes. Remove the chicken breasts from the pan, arrange them on plates, season the sauce with salt and pepper and thicken with a little cornstarch if necessary, then add them to the plate. Sprinkle with the chopped parsley. Serve with rice.
