Quark pancakes with berry sauce

Ingredients for 1 servings:

  • 250 g floury potatoes
  • 100 g low-fat curd cheese
  • 1 small egg(s)
  • 1 tbsp Flour, Type 1050, or another
  • 1 pinch of salt
  • 1 pinch of cinnamon
  • some lemon peel, grated
  • Sweetener, possibly
  • 1 tbsp oil
  • 150 g berries, mixed, frozen or fresh
  • ½ tsp honey
  • 1 pinch of vanilla

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Boil the potatoes, peel them, and then finely grate them (you can also use day-old potatoes). Mix with quark, egg, flour, salt, cinnamon, and lemon zest. Season with sweetener to taste. Heat oil in a nonstick pan, add the batter one tablespoon at a time, and fry on both sides. Drain the finished cakes on kitchen paper. For the sauce, heat the berries, add the honey and vanilla seeds, and mix everything together.
