Peanut curry

Ingredients for 4 servings:

  • 1 onion(s)
  • 2 bell peppers
  • ½ bunch of spring onions
  • 2 cups whipped cream
  • 5 tbsp peanut butter
  • curry powder
  • 1 jar orange juice
  • 3 tsp soy sauce
  • 2 cloves garlic
  • 500 g chicken breast
  • Paprika powder
  • chili powder
  • salt and pepper
  • olive oil

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 55 minutes

Wash the chicken breast and cut into bite-sized pieces. Peel and chop a clove of garlic, then add it to the chicken along with the orange juice and soy sauce. Let it simmer for about an hour. Chop the onions, bell peppers, spring onions, and garlic and set aside. Remove the chicken from the orange juice mixture, drain well, and reserve the juice. Season the meat generously with curry, salt, and pepper. Add the olive oil to the pan and sear the meat until golden brown. Deglaze with the orange juice mixture and add the cream. Gradually stir in the peanut butter and let it melt. Season everything generously, especially the chili powder to give the dish a little extra spice. Cook everything over medium heat for about 15 minutes. Rice goes well with this, as it absorbs the sauce nicely.
