Ingredients for 10 servings:

  • 1 kg meat (beef, pork or lamb)
  • ¼ cup oil
  • Salt
  • 2 carrots
  • oil
  • 2 onions, diced
  • 1 bell pepper(s), diced
  • 2 tomatoes, diced
  • 1 kg potatoes
  • 2 bay leaves
  • Paprika powder, hot
  • 3 liters of boiling water
  • possibly parsley or dill, finely chopped

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Kyrgyz stew

Cut the meat into large cubes and fry briefly in oil. Season generously with salt and hot paprika. Then let it simmer in its own juices for about 1 hour. Meanwhile, finely chop the carrots and fry them in oil. Fry the diced onions, bell peppers, and tomatoes. Peel and roughly dice the potatoes, and add them to the meat along with the sautéed vegetables. Fill the mixture with 3 liters of boiling water. Add 2 bay leaves and then season the stew again with salt and hot paprika. Simmer for 20 minutes. Sprinkle with finely chopped parsley or dill, if desired.
