Apple Schmalunz

Ingredients for 6 servings:

  • 1 ½ kg apples
  • little water
  • possibly lemon juice
  • 200 g sugar
  • 2 egg whites

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Apple foam or apple snow. This is one of my favorite desserts and comes from the Baltic branch of my family.

Peel the apples and boil them in a little water or bake them in the oven. When they’re soft, strain them through a sieve (adding a little lemon juice if desired). Whisk the egg whites and sugar until stiff peaks form. Gradually add the applesauce and whip until fluffy. This works best with a food processor. You’ll be amazed at how fluffy it becomes once you add the apples. Serve immediately after whipping; it will collapse quickly. Serve with custard.
