Creamy Banana Bread

Ingredients for 1 servings:

  • 125 g butter, soft
  • 225 g cream cheese, room temperature
  • 250 g sugar
  • 2 eggs
  • 225 g banana(s), mashed
  • 1 tsp vanilla extract
  • 280 g flour, sifted
  • 1 ½ tsp baking soda
  • ½ tsp baking powder
  • 90 g nuts (pecans), chopped
  • 2 tbsp brown sugar
  • 2 tsp cinnamon

Working time approx. 10 minutes; Total time approx. 10 minutes

Cream the butter until very creamy, then stir in the cream cheese. Add the white sugar and beat in the eggs, one at a time. Add the bananas and vanilla. Combine the flour with the baking powder and baking soda and fold in until the dry ingredients just begin to moisten (do not use a mixer!). Mix the nuts with the brown sugar and cinnamon. Pour half of the batter into a greased and floured loaf pan. Spread the nut mixture over the batter and top with the remaining batter. Bake in a preheated oven at 350 degrees F for 45 minutes.
