Fried Green Tomatoes

Ingredients for 4 servings:

  • 2 m.-large tomato(s), green, chilled
  • 1 tbsp mustard (Dijon mustard)
  • 1 tsp sugar
  • ½ tsp salt
  • ¼ tsp paprika powder
  • 1 pinch(s) of cayenne pepper
  • 1 ½ tsp Worcestershire sauce
  • 75 g corn flour, yellow
  • 4 tbsp lard or bacon fat, heated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut tomatoes into 12 mm thick slices. Combine mustard, sugar, salt, paprika, cayenne pepper, and Worcestershire sauce and spread on both sides of the tomato slices. Coat the tomato slices in cornmeal. Fry in hot, rendered bacon fat or lard over medium heat for 3 minutes per side until nicely browned. Drain on paper towels and serve hot.
