Ingredients for 4 servings:

  • 4 pork schnitzels, each approx. 200 g
  • 100 g cream cheese
  • 3 eggs
  • Flour
  • breadcrumbs
  • Clarified butter

Karadjordje schnitzels are schnitzel rolls from Serbia. Their cream cheese filling makes them slightly lighter than the German “in Sauce ertränkten” (drenched in sauce). Pound the schnitzels very thinly. This is very important, as otherwise the schnitzels will be golden brown on the outside but only half-cooked on the inside. After pounding, they should measure approximately 20 cm x 20 cm. Spread the cream cheese evenly over the schnitzels. Roll up the schnitzels and secure the rolls with toothpicks. Coat the rolls “Viennese style” in flour, eggs, and breadcrumbs. Heat clarified butter in a pan. This should be enough to cover the schnitzels about 1/4 full in lard. Fry the schnitzels until evenly golden brown. Serve with buttered or parsley-flavored potatoes.
