Marshmallows with apricots

Ingredients for 4 servings:

  • 8 apricot(s), ripe and juicy
  • 8 marshmallows

Instructions

Soak 8 bamboo skewers in water until saturated. Heat up the grill. Halve each apricot and remove the pit. Thread the first half onto a skewer with the open side facing the tip. Place a marshmallow on top and finish with the second half, ensuring that both apricot halves enclose the marshmallow. Carefully but firmly push the two halves together; they don’t need to touch. Grill the loaded skewers directly at a high temperature for about 3 minutes, turning them several times. Ideally, the marshmallow will be slightly crispy on the outside, melt on the inside, and the fruit will show burnt marks from the grill.
