Georgia-style spare ribs

Ingredients for 4 servings:

  • 2 kg rib(s) (spare ribs), thick, from pork
  • 1 liter of broth
  • 2 onions, chopped
  • 200 g apricot jam or peach jam
  • 50 g sugar
  • 50 ml apple cider vinegar
  • 3 tbsp ketchup
  • 25 ml Worcestershire sauce
  • 2 lemons
  • 1 tsp mustard
  • ½ tsp Tabasco
  • 1 pinch(s) of salt and pepper

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 25 minutes

Typical American BBQ standard dish.

Cook the spare ribs in a pot with the broth for about 30 minutes. Reserve the lemons. Mix the remaining ingredients and simmer in a pot for about 15 minutes. Remove the ribs from the broth, dry them, and rub them with pepper and salt. Wrap the ribs in aluminum foil and generously brush them with the sauce. Cook in the oven at about 150°C for about 30 minutes, then open the aluminum foil and brush them again with the rest of the sauce. Leave the aluminum dish open and finish cooking in the oven for another 15 minutes. The ribs are ready when the sauce has glazed over the ribs and they have turned darker. They can also be prepared on the grill: Place the ribs on the grill for 60 minutes at medium heat. After about 30 minutes, turn the ribs over and brush them with the sauce again. Cover with aluminum foil if the ribs are getting too dark. Wash the lemons with hot water, slice them, and place them on the finished ribs.
