Fletcher's pork loin steaks marinated in wheat beer

Ingredients for 10 servings:

  • 10 pork steaks from the back, 250g each
  • 3 bottles of wheat beer
  • 1 tsp salt
  • ½ tsp black pepper, freshly ground
  • ½ tsp chili powder
  • 1 tbsp paprika powder, sweet
  • 1 chili pepper(s)
  • 3 onions
  • 4 cloves garlic
  • 2 bay leaves
  • 1 tbsp juniper berries, crushed
  • ½ tsp mustard seeds
  • 4 sprigs of lovage (Maggi herb)

Instructions

Working time approx. 1 hour; Rest period approx. 2 days; Total time approx. 2 days 1 hour

The meat is marinated (pickled) for 48 hours before grilling. The marinade is prepared as follows: Prepare a large bowl. Peel the garlic cloves and dice very finely. Peel the onions and slice into rings, adding the crushed juniper berries. Wash the lovage, remove the stems, and chop finely. Add to the onions. Cut open the chili pepper; if desired, remove the seeds, remove the white ribs (which make it bitter), and chop very finely. Add to the bowl. Crumble the bay leaf and add it as well. Now add the mustard seeds and all the other spices. Mix everything well. Open two bottles of wheat beer (the third is for the cook) and pour them into the bowl (please remove the yeast from the bottom of the bottle; it comes with the beer). Mix everything well. Add the meat, making sure it is completely covered. Add more beer if necessary. Then refrigerate to marinate for about 48 hours. Shortly before grilling, remove from the marinade, drain, and grill as usual. Note: Herb butter and baguette go well with this dish. If you like, you can also serve onions braised in beer. This is just a marinating suggestion. Of course, you can add or omit other herbs and spices.
