Ingredients for 4 servings:
- 800 g pork shoulder
- 2 large onions, cut into rings
- 2 garlic cloves, sliced
- Salt
- pepper
- 4 tbsp oil, neutral

for pan and grill
Place the meat, cut into thin slices, in a freezer bag with the onion, garlic, salt, and pepper. Mix thoroughly, seal, and let stand for about an hour. Then add the oil, mix thoroughly again, seal, and let stand in the refrigerator, ideally overnight. Fry the marinated meat in a grill pan without any additional fat over medium heat until browned to your liking. I deliberately avoid skewering the meat because it cooks better that way. If you want to cook the meat on a charcoal grill, skewer it so it’s easier to turn. Serve with fresh salads.
