Ingredients for 8 servings:

  • 500 g flour
  • 350 g butter or margarine
  • 175 ml water (ice water)
  • 25 ml lemon juice
  • 1 tsp salt
  • 500 g minced beef
  • 250 g mushrooms, cleaned, weighed
  • 2 onions
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp coriander

Meat Pies

Quickly mix the dough ingredients and chill the dough. Chop the mushrooms medium-finely and the onions very finely, then mix well with the other filling ingredients and the minced meat. Roll out the dough to about 4mm thick, cut out round discs, and spread the filling on them so they can be folded over. Press the edges together firmly (the discs will be about the size of burger buns). Brush with milk, place on a baking sheet lined with baking paper, and bake for 15 minutes at 200°C, then another 45 minutes at 180°C until golden brown, covering with parchment paper if desired. You can also roll the dough into a disc, spread with the filling, leaving a border on three sides. Then roll it into a log and seal it tightly with the unfilled edges, bake as above, and slice to serve. The pies can be eaten hot or cold; they can also be heated briefly in the microwave. A spicy sauce is often served on top.
