Raisin Kind's Pumpkin and Orange Chutney

Ingredients for 1 servings:

  • 1,000 g pumpkin flesh, diced
  • 350 g apples, peeled, diced
  • 2 onions, peeled and diced
  • 2 oranges, peeled and white, diced
  • 2 cloves garlic (or more), cleaned, chopped
  • 300 g brown sugar
  • 250 ml balsamic vinegar, white
  • 300 ml white wine
  • 1 vanilla pod(s), split
  • 2 tbsp salt, level
  • 2 tsp pepper, green, fresh
  • 125 g cranberries, dried
  • some ginger, pickled, 2 balls of it
  • 10 grains of allspice
  • 70 ml water or 100 ml orange juice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Combine all ingredients in a large enough pot and simmer until thickened. Add a little more water or orange juice if it starts to thicken (approx. 70 ml). Purée with a hand blender or mash with a potato masher. Remove the vanilla pod. Spoon the chutney into prepared twist-off jars, screw on the lids, and let cool. It tastes great with poultry.
