Ingredients for 1 servings:
- ½ cup oatmeal
- 2 1/4 cups flour
- ½ tsp baking powder
- 1 tsp salt
- ¼ tsp cinnamon
- 1 cup butter, soft
- ¾ cup brown sugar
- ¾ cup sugar, white
- ½ tsp vanilla extract
- ½ tsp lemon juice (concentrate)
- 2 large eggs
- 3 cups of dark chocolate (chopped)
- ½ cup walnuts, chopped

Finely grind the oats and mix them with the flour and other dry ingredients. Using a hand mixer, mix the butter, sugar, vanilla, and lemon juice together. Finally, add the eggs and beat the mixture until fluffy. Add the dry ingredients and mix well. Knead in the chopped chocolate and nuts with your hands. Wrap the dough tightly and let it rest in the refrigerator overnight. The next day, spoon about 1/4 cup-sized amounts of dough onto a baking sheet lined with parchment paper, leaving about 5 cm between each cookie, as the cookies will spread. This should make 20 cookies in total. Bake at 180°C for about 16-18 minutes, until the cookies are light brown and still soft in the center. These cookies are truly gigantic and by far the tastiest cookies I’ve ever seen. However, because of their size, you won’t be able to make more than one.
