Ingredients for 4 servings:

  • 850 g tomatoes, ripe, sliced
  • 1 large onion(s), thinly sliced, then cut into rings
  • ¼ tsp salt
  • 1 tbsp mint, fresh, chopped
  • 2 tsp chives, fresh, chopped
  • 4 tsp olive oil
  • 4 tsp red wine vinegar
  • 1 tsp Dijon mustard
  • ½ tsp garlic, very finely chopped
  • pepper, black

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Creole Tomato Salad

Alternate the tomato slices and onion rings on a plate or platter. Sprinkle with salt, mint, and chives. For the vinaigrette, combine the red wine vinegar, mustard, and garlic in a bowl. Add the olive oil and mix well. Drizzle the vinaigrette over the salad. Sprinkle with freshly ground pepper and serve.
