Ingredients for 4 servings:
- 850 g tomatoes, ripe, sliced
- 1 large onion(s), thinly sliced, then cut into rings
- ¼ tsp salt
- 1 tbsp mint, fresh, chopped
- 2 tsp chives, fresh, chopped
- 4 tsp olive oil
- 4 tsp red wine vinegar
- 1 tsp Dijon mustard
- ½ tsp garlic, very finely chopped
- pepper, black

Creole Tomato Salad
Alternate the tomato slices and onion rings on a plate or platter. Sprinkle with salt, mint, and chives. For the vinaigrette, combine the red wine vinegar, mustard, and garlic in a bowl. Add the olive oil and mix well. Drizzle the vinaigrette over the salad. Sprinkle with freshly ground pepper and serve.
