Ingredients for 1 servings:
- 500 g spelt flour type 630
- 500 g wholemeal spelt flour
- 1 bag of dry sourdough
- 2 sachets of dry yeast
- 20 g salt
- 20 g baking malt, you can also use malt coffee (Carokaffee)
- 730 ml water
- Oil for the baking tray
- 2 ½ kg jacket potatoes from the previous day
- 8 m.-sized eggs
- 2 cups sour cream
- ½ cup of sour cream or mascarpone, approx. 100 – 125 g
- 4 tbsp parsley, chopped
- 200 g chives or shallots, alternatively leek, finely chopped
- 200 ml milk
- salt and pepper
- Vegetable stock powder
- 500 g bacon cubes, streaky
- Breadcrumbs
- 1 kg apples, e.g. Boskop
- 100 ml oil
- 3 tbsp sugar
- 300 g dough
- Cinnamon sugar or vanilla sauce
Instructions
Working time approx. 45 minutes; Rest time approx. 1 day 30 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 day 2 hours 45 minutes
all from one dough, for one baking tray and a 20 x 30 cm loaf pan
Prepare the dough the day before. Cover and let stand. Cook the potatoes and let cool. On the day of baking, knead the dough again thoroughly and roll out 700g of dough onto a greased baking sheet. Set 300g of dough aside and cover. Prick the rolled out dough several times with a fork to prevent air bubbles from forming during baking. Cover with a kitchen towel. Peel the potatoes and press them through a ricer. Mix with the remaining ingredients, except for the bacon and breadcrumbs, and season with salt, pepper, and stock powder. Spread evenly over the dough. Now roll the bacon in breadcrumbs and sprinkle evenly over the potato mixture. Bake in a preheated oven at 220°C (top/bottom heat) for about 40-50 minutes on the middle rack. If you like it savory, you can also try it with leeks, but then you’ll need to sprinkle caraway seeds over the mixture. For dessert, place the peeled and quartered apples in a 20 x 30 cm loaf pan greased with oil. Roll out the reserved dough and place it on top of the apples. Drizzle with the remaining oil and sprinkle with sugar. Bake at 220 degrees Celsius (top/bottom heat) for about 40 minutes on the middle rack. Remove from the oven and turn out. If desired, add sugar and cinnamon. Vanilla sauce also goes well. Serve warm.
