Lemon White Chocolate Cookies

Ingredients for 1 servings:

  • 175 g butter
  • 150 g sugar, brown
  • 150 g cream cheese
  • 1 packet of vanilla sugar
  • 350 g flour
  • 2 tsp baking powder
  • 150 g white chocolate
  • ½ lemon(s), juice and grated zest
  • 1 pinch of salt

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

makes about 35 cookies

Combine the flour and baking powder, sift, and set aside. Cream the butter with the sugar, vanilla sugar, and a pinch of salt until fluffy. Then stir in the cream cheese, lemon juice, and zest. Stir the flour into the butter mixture. Finely chop the chocolate and carefully fold it in. Using a teaspoon, place small mounds of dough onto the baking sheet and bake in the preheated oven for 8-10 minutes. Don’t overcook them, as they should stay soft. After baking, let the cookies rest on the baking sheet for a few minutes, then cool completely on a wire rack.
