Ingredients for 1 servings:

  • 6 cups flour
  • 2 packets of baking powder
  • 3 tbsp cinnamon powder
  • 1 tsp salt
  • 4 cup(s) bran
  • 4 cup(s) brown sugar
  • 1 tbsp honey
  • 2 cups vegetable oil
  • 8 eggs
  • 6 cup(s) carrot(s) or zucchini, grated
  • 500 g raisins or currants
  • Paper cups

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 48 minutes

Combine the dry ingredients. Whisk the oil and eggs together and stir into the dry ingredients. Stir in the remaining ingredients. Pour the batter into the holes of a muffin tin lined with paper baking cups. Bake at 180°C (top/bottom heat) for about 18 minutes.
