Balinese chicken breast with sweet and sour sauce – Ayam asam Manis

Ingredients for 2 servings:

  • 1 small can of pineapple pieces
  • 250 g chicken breast
  • 6 tbsp soy sauce, sweet
  • 1 large onion(s), chopped
  • 1 clove(s) garlic, chopped
  • 3 chili peppers or less, depending on spiciness, chopped
  • Rapeseed oil or sunflower oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Wash the chicken breast, pat dry, and cut into small pieces. Lightly fry in a little oil for about 5 minutes. Remove the chicken from the pan, then fry the onions until lightly browned. Add the garlic and chili and sauté for 3 minutes. Return the chicken to the pan and add the canned pineapple chunks and their juices, stirring well. Add the sweet soy sauce and season with salt and pepper. Simmer over medium heat for about 10 minutes, stirring occasionally. Serve with basmati rice.
