Curry chicken with fried banana

Ingredients for 2 servings:

  • 2 chicken fillets
  • 1 can coconut milk
  • 150 ml chicken broth, can be a ready-made product
  • curry
  • Butter, for frying
  • 2 bananas
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the chicken fillets into cubes and fry them in the butter. Add a little salt and pepper, but only very lightly—the broth is also spicy. Sprinkle generously with curry powder—it should be a nice yellow color. Now pour in the broth and coconut milk and simmer gently for about 5 minutes. In the meantime, peel the bananas and halve them lengthwise. Heat a little butter in a pan and fry the bananas over medium heat until golden brown on both sides. It sounds strange, but it tastes really delicious. I always have to fry two extra bananas for my daughter. I serve it with rice. It’s also easy to cook in large batches for the next party—then put the fried bananas in the oven to warm up. Good luck!
