Marble Cheesecake American Style
Mix the rusk crumbs with the melted butter and press them onto the bottom and sides of a greased springform pan. Alternatively, you can use shortcrust pastry. Beat the eggs until frothy, then add the sugar and beat until creamy. Then gradually stir in the cream cheese, sour cream, and cornstarch. Divide the mixture in half. Melt the chocolate in a double boiler and stir it, along with the cocoa, into one half of the cheese mixture. Meanwhile, preheat the oven to 180°C. Now fill the two mixtures alternately, spoonful by spoonful, into the springform pan. If necessary, marble the surface a little with a fork. Bake in the preheated oven for about 70-80 minutes. Let cool in the oven for at least 2 hours. Then remove from the oven and garnish with chocolate, if desired. Tastes delicious even warm. If you want to use semi-skimmed butter and balanced cream cheese (approx. 14-16%), you will end up with 16 pieces of 300 kcal each instead of 380 kcal.
