Cajun-style grilled fish

Ingredients for 4 servings:

  • 4 fish fillets, thickly sliced
  • 100 g butter
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tsp white pepper, ground
  • 2 tsp black pepper, ground
  • 2 tsp cayenne pepper
  • 2 tsp thyme
  • 1 tsp oregano
  • paprika

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cajun-style blackened fish

Combine all spices except the paprika to create the “Cajun seasoning.” Melt the butter in a saucepan. Brush the fish fillets with the melted butter and rub with Cajun seasoning and paprika. Grill briefly on or under a very hot grill. The fish should be black on the outside and remain white and juicy on the inside. Serve with grilled corn on the cob and sweet potatoes.
