S’mores
Preheat oven to 180°C. Line a 20×20 cm baking pan with parchment paper. Cream butter with both types of sugar until creamy, then add the egg and vanilla. Combine the flour, cookie crumbs, baking powder, and salt. Add the butter mixture to the flour mixture and mix. Divide into two equal halves. Press one half into the pan, ideally also pulling up the edges a little. Chop the chocolate and spread it on the bottom. Spread the marshmallow cream on top (this is a bit tricky because it’s extremely sticky). Spread the rest of the batter over the marshmallow cream. This works best if you flatten small pieces in your hand and then spread the slices over the cream until everything is covered. Bake in the oven for about 30 minutes, until golden brown. Let it cool, then refrigerate for another hour before cutting into small pieces. Very sweet, very delicious, and you’ll want more, hence the name S’more Bars.
