Kale – low in fat

Ingredients for 2 servings:

  • 350 g kale, frozen
  • 1 large onion(s)
  • 2 garlic cloves
  • 1 tsp vegetable broth
  • 1 tbsp olive oil
  • 1 tbsp butter
  • salt and pepper
  • Sugar
  • Milk or cream
  • nutmeg

The low-fat version, for example, is very tasty with fish

Bring the kale to a boil in a little water according to the package instructions. Add the vegetable stock and simmer for about 15-20 minutes. Heat the olive oil and butter in a pan and brown the diced onion and finely diced garlic. Drain most of the water from the kale and add the kale to the pan with the onions and garlic. Season with salt, pepper, nutmeg, and sugar to taste. Simmer for about 10-15 minutes, then add a splash of milk or cream to taste. We serve this with homemade mashed potatoes and fried fish.
