Ingredients for 4 servings:

  • 1 chicken (soup chicken)
  • 2 cloves garlic
  • 1 small onion(s)
  • 1 roll (stale)
  • 1 egg(s)
  • Salt
  • pepper
  • Breadcrumbs
  • oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

(Meatballs made from boiled chicken)

Remove the meat from 1 chicken (cooked for about 2-3 hours). Place the meat in a food processor along with 2 cloves of garlic (or more if you prefer), 1 small onion, and a stale bread roll that has been soaked in water (and then squeezed out the excess water). Blend until you have a nice meatball mixture. I prefer a food processor for this; Grandma used to put everything through a meat grinder one after the other. Add 1 raw egg to the mixture and season generously with salt and pepper. Form the mixture into meatballs, coat them in breadcrumbs, press them down lightly, and fry them slowly in a pan with oil until golden brown. Grandma usually served this with homemade mashed potatoes (basted with a little cooking fat) and creamed spinach or cucumber salad. It’s also delicious with pasta or simply served cold on buttered bread!
