Stuffed meatloaf with potato crust

Ingredients for 8 servings:

  • 1 kg minced meat, mixed
  • 1 onion(s)
  • 3 eggs
  • 3 tbsp breadcrumbs
  • 1 tbsp mustard
  • salt and pepper
  • 300 g cheese (Gouda)
  • 300 g cooked ham
  • 500 g potatoes, waxy or ready-made hash brown

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cordon bleu with a twist

Place the minced meat and diced onion in a bowl, knead with one egg, breadcrumbs, and mustard to form a dough. Season with salt and pepper. Dust the work surface with breadcrumbs and spread the meat mixture out onto it (approx. 30 x 30 cm). Distribute the cheese and cooked ham on top. Leave a small edge free on the sides so that you can seal the roast. Carefully roll up the dough and seal it well all around to prevent the cheese from seeping out. Place on a baking sheet lined with baking paper. Peel the potatoes, coarsely grate them, and mix them with two eggs. Season with salt and pepper. Cover the meatloaf all over with the batter and bake at 200°C for one hour. If the potatoes start to get too brown, cover with aluminum foil towards the end of the baking time.
