Glass noodle salad

Ingredients for 4 servings:

  • 250 g glass noodles
  • 3 bell peppers, red, yellow and green
  • 1 tbsp oil (sesame oil)
  • 2 tbsp soy sauce, light
  • ½ lemon(s), juice
  • 1 tbsp brown sugar
  • 1 tsp sambal oelek
  • 1 tbsp sesame seeds, preferably hulled
  • ½ bunch of spring onions
  • Coriander leaves, as desired
  • Stems of mint, fresh

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Pour boiling water over the glass noodles in a bowl and let them soak for about 10 minutes. Then pour them into a sieve and rinse them with cold water; drain. In the meantime, clean the bell peppers and cut them into very small cubes. Chop the spring onions diagonally into small pieces. Place the glass noodles in a salad bowl, add the bell peppers and spring onions. Make a sauce from soy sauce, lemon juice, sesame oil, sugar, and sambal oelek and pour it over the salad. Wash the mint and coriander leaves, shake dry, finely chop, and add them along with the sesame seeds. Mix everything thoroughly and let it sit for at least another half hour, if possible. Season to taste before serving.
