Ingredients for 1 servings:

  • 200 g flour
  • 50 g powdered sugar
  • 140 g butter
  • 400 g cream cheese
  • 70 g powdered sugar
  • 2 eggs
  • 2 pkt. vanilla extract, or 1/2 bottle vanilla flavor
  • 4 apples, approx. 160 g unpeeled
  • 50 g brown sugar
  • 50 g almonds, chopped
  • 50 g nuts (pecan) or walnuts, chopped
  • Cinnamon and sugar, for sprinkling

Working time approx. 25 minutes; Total time approx. 25 minutes

Apple Cheesecake

Make a shortcrust pastry from the flour, 50g powdered sugar, and butter and line a 26cm springform pan with it. Mix the cream cheese, 70g powdered sugar, vanilla extract, and eggs and pour into the pan. Peel and slice the apples, mix with the sugar, and spread evenly over the filling. Sprinkle the chopped nuts over the apples and sprinkle generously with cinnamon sugar. Press the edges of the pastry down to the level of the filling (the cake won’t rise). Bake the cake in a preheated oven to 180°C (fan-assisted) for 35 minutes, covering it with baking paper for the last 10 minutes. Allow to cool thoroughly before slicing.
