Asian vegetable stir-fry

Ingredients for 2 servings:

  • 1 tsp vegetable oil
  • 500 g vegetables (Chinese vegetable mix, frozen)
  • 1 tbsp chickpeas (canned)
  • 100 g pineapple pieces (canned)
  • 2 tbsp ketchup
  • 2 tbsp soy sauce
  • 2 tbsp tomato paste
  • 100 ml pineapple juice (canned)
  • Spice mix (Chinese spice)
  • pepper
  • 160 g rice

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Cook rice as usual. Heat oil in a deep pan, add Chinese vegetables and chickpeas, and stir-fry. Drain pineapple and reserve any juice. Add pineapple chunks, mix together ketchup, soy sauce, tomato paste, and pineapple juice, pour in the water, and cook for about 5 minutes. Season with Chinese spice and pepper. Serve the vegetable stir-fry with rice.
