American Chocolate Muffin

Ingredients for 12 servings:

  • 250 g flour
  • 30 g cocoa powder
  • 110 g butter
  • 100 g sugar
  • 2 eggs
  • 170 ml milk
  • 1 packet of vanilla sugar
  • 2 tsp baking powder
  • 100 g dark chocolate
  • 100 g chocolate, whole milk
  • ½ tsp salt

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 43 minutes

Chop the two chocolate bars into small pieces. Mix together the flour, cocoa powder, baking powder, and salt. Melt the butter in a saucepan and separate the egg whites from the egg yolks. Mix the egg yolks with the sugar, vanilla sugar, salt, and milk. Beat the egg whites until stiff peaks form and add to the liquid mixture. Gradually add everything to the flour mixture, then add the melted butter and chocolate pieces and mix thoroughly with a hand mixer. Pour the batter into greased muffin cups and bake at 190°C (375°F) on medium heat for 18 minutes. Done! If desired, the muffins can also be decorated with white chocolate glaze for a visual highlight—although this could make them very sweet.
