Mars Chocolate Cheesecake

Ingredients for 1 servings:

  • 250 g biscuits (chocolate biscuits)
  • 150 g butter, melted
  • 2 tbsp sugar, brown
  • 20 g butter
  • 300 ml cream
  • 50 g chocolate (milk chocolate), in small pieces
  • 3 tsp gelatin
  • 60 ml water
  • 500 g cream cheese, mascarpone or Philadelphia
  • 110 g sugar, white
  • 3 chocolate bars (Mars), in small pieces

Working time approx. 1 hour; Total time approx. 1 hour

no baking, easy to prepare the day before

Grind the chocolate cookies into a powder. Add the melted butter and stir until smooth. Press into a 20cm springform pan to form the base and form a rim. Refrigerate for 30 minutes. In the meantime, combine the brown sugar with 20g of butter and 2 tablespoons of cream in a saucepan and cook over low heat until caramelized. This can take quite a while; I usually do it for around 40 minutes. Combine the chocolate with 2 tablespoons of cream in another saucepan and heat over low heat until the chocolate has melted. Whip the remaining cream until stiff peaks form. Mix the gelatin with the water and melt over a bain-marie. Let cool for 5 minutes. Mix the cream cheese with the white sugar. Mix the gelatin and Marsala pieces with the cream cheese mixture, then carefully fold in the whipped cream. Pour half of this cream into the prepared pan, spread half of the caramel sauce and the chocolate sauce on top. Spread the other half of the cream cheese mixture on top, and finally, top with the remaining sauces. Use a fork to create a nice pattern. Refrigerate for at least 3 hours, preferably overnight.
