Ingredients for 4 servings:

  • 4 slice(s) pork neck steak(s) or pork loin steaks (Schwenkbraten)
  • 1 cup cream, long-life
  • 2 tbsp vinegar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Place the 4 slices of Schwenkbraten (swivel roast) close together in a casserole dish. Then cook in a preheated oven at 200°C (top/bottom heat) for 40 minutes. Remove the dish. Whisk 1 cup of cream with 2 tablespoons of vinegar until stiff peaks form and pour over the meat. Cook again at 140°C (284°F) for about 40 minutes. This goes very well with fried potatoes and salad. Additional comment: Schwenkbraten (from Saarland) is marinated and seasoned pork neck or pork loin steaks. Marinated in either a herb or paprika marinade, and you can buy them ready-made from the butcher. They’re usually grilled outdoors in the summer, but they’re also delicious in the oven, and they won’t dry out!
