Ingredients for 8 servings:
- 1 kg carrot(s)
- 5 cloves garlic
- 2 tsp coriander seeds
- 5 tbsp vinegar
- 2 tbsp honey
- ½ chili pepper(s)
- Salt
- 4 tbsp oil
Instructions
Working time approx. 10 minutes; Rest time approx. 10 minutes; Total time approx. 20 minutes
Ukrainian style, with garlic, coriander and honey
Grate the carrots thinly using a julienne grater. Combine in a bowl with crushed garlic, freshly ground coriander seeds, finely chopped chili pepper, honey, vinegar, and salt. Let stand at room temperature for 10-20 minutes, stirring occasionally. Then add the oil and mix well again. The salad pairs well with grilled meat and can be prepared the day before. Note: In Ukraine, spicy carrot salad is also often used to make hot dogs.
