Ingredients for 1 servings:

  • 400 g flour
  • 250 g butter, cold
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • 4 egg yolks
  • 3 tbsp cream, sweet or sour
  • 4 egg whites
  • 200 g sugar
  • 250 g ground almonds
  • Powdered sugar, for sprinkling

Mrs. Ammon always bakes us delicious almond croissants for coffee. Here I’d like to share her delicious recipe for tender almond croissants or almond crescents. Dough: Knead flour, butter, salt, vanilla sugar, egg yolks, and cream into a dough. Form into 4 balls, cover with plastic wrap, and let rest in the refrigerator overnight. Filling: Beat egg whites until stiff, sprinkle in small amounts of sugar, and fold in ground almonds. Roll out each dough ball individually into a circle. Cut them with a knife like slices of cake. Spread the individual triangles with the nut mixture and roll them up. Shape them into crescents. Bake in a preheated oven at 180°C for about 15 minutes. Sprinkle with powdered sugar while still warm. These crescents taste truly tender!
